Some of you who have been to my workshops know that we HAVE to have something delicious for tea and this is a great recipe to produce muffins in a flash. Make up a batch of the dough and keep it in the refrigerator for a week or so ... (hmmm it never lasts that long in my house). |
Bran Muffins
This is a wonderful mixture that can be made and kept in your refrigerator for a couple of weeks and spooned into a baking pan when you are ready to have a delicious bran muffin with your tea.
Mix together:
4 eggs
1 litre buttermilk
1 cup oil
2 cups dark brown sugar
1 tablespoon treacle syrup
1 teaspoon vanilla essence
Add and fold in:
2 cups raw bran
2 cups bran flakes
1 teaspoon salt
5 teaspoons bicarb
1 cup mixed cake fruit
Chopped dates, nuts, coconut can be added to vary the mixture
Spoon into a greased patty pan and bake the amount you require at 180 degrees C for approximately 15 - 20 minutes
